Jeg hadde en venninne jeg var uendelig misunnelig p\u00e5, for jeg visste at der hjemme lagde de ikke langtidskokt bolognesesaus med gulr\u00f8tter og hjemmelaget kraft &#8211; der serverte de kokt spaghetti med stekt kj\u00f8ttdeig, sm\u00f8r og ketchup. Og man kunne bestemme blandingsforholdene <em>helt <\/em>selv. Hvilket innebar at jeg kunne droppe alt som lignet tomatsaus og bare spise pasta med sm\u00f8r og litt kj\u00f8tt til middag. Hvilken luksus! S\u00e5 eksotisk! Jeg s\u00e5 p\u00e5 den ihjelstekte kj\u00f8ttdeigen og d\u00f8de av misunnelse. Hvor heldig var det lov \u00e5 v\u00e6re, liksom. I tillegg hadde min venninne marsvin, s\u00e5 sjalusien ville alts\u00e5 ingen ende ta.<\/p>\n\n\n\n<p>I dag vet jeg jo at det var <em>jeg <\/em>som fikk servert den beste maten. De voksne smaksl\u00f8kene har for lengst innsett det barnekroppen var for umoden til \u00e5 forst\u00e5 &#8211; langtidskokt bolognese er guddommelig godt. Men i blant, n\u00e5r barnet i meg roper, jeg har d\u00e5rlig tid, d\u00e5rlig r\u00e5d eller bare er fysen p\u00e5 noen digge karbohydrater, lager jeg cacio e peppe. Pasta med ostesaus og pepper. Barnslig godt, alts\u00e5. Originalt lages det med parmesan og pecorino, men akkurat i dag brukte jeg V\u00e4sterbottensost, og jeg vet faktisk ikke om jeg kan g\u00e5 tilbake. S\u00e5. UTROLIG. Godt. <\/p>\n\n\n\n<figure class=\"wp-block-table\"><table><tbody><tr><td>Porsjoner: 2<\/td><\/tr><\/tbody><\/table><\/figure>\n\n\n\n<hr class=\"wp-block-separator\"\/>\n\n\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-9d6595d7 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\" style=\"flex-basis:33.33%\">\n<p><strong>Ingredienser<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>200 gram papardelle (eller spaghetti eller bucatini &#8211; bruk det du har)<\/li><li>3 ss koshersalt (eller 1 ss vanlig husholdningssalt)<\/li><li>50 g meierism\u00f8r<\/li><li>2 ts grovkvernet pepper<\/li><li>50 g V\u00e4sterbottensost<\/li><li>1\u20132 dl pastavann<\/li><\/ul>\n<\/div>\n\n\n\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\" style=\"flex-basis:66.66%\">\n<p><strong>Fremgangsm\u00e5te<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\"><li>Kok opp en stor gryte (min tar 4 liter) vann, og ha i salt. Kok pastaen i et lite minutt kortere enn det som st\u00e5r beskrevet p\u00e5 pakken.<\/li><li>Finriv osten p\u00e5 et rivjern og kutt sm\u00f8ret i terninger.<\/li><li>N\u00e5r pastaen n\u00e6rmer seg ferdig, ta av 2 dl pastavann i en kopp. Dette vannet er fullt av stivelse, og er med p\u00e5 \u00e5 lage sausen fl\u00f8yelsmyk.<\/li><li>Hell av pastaen i et d\u00f8rslag, og ha den tilbake i kjelen. Sett kjelen p\u00e5 lav varme (alle koketopper er forskjellige, men jeg veksler mellom 3 og 4 p\u00e5 min)<\/li><li>Ha sm\u00f8ret, ca 1 dl pastavann, pepper og ost i kjelen med pastaen, og r\u00f8r rundt. Det skal forme seg en kremet saus. Ha litt t\u00e5lmodighet, og r\u00f8r i et par minutter. I starten vil det se ut som s\u00f8levann, men stivelsen i vannet binder seg med sm\u00f8ret og osten og blir en kremet saus &#8211; etter hvert. Ikke gi opp. Tilsett mer vann\/sm\u00f8r\/ost hvis du synes det trengs. Smak til med litt salt.
