Det var ved spisebordet til foreldrene mine, og jeg er ganske sikker p\u00e5 at vi feiret noe, selv om \u00e5rsaken til feiringen har forsvunnet fra minnet. Jeg vet at jeg, p\u00e5 den tiden, ikke var s\u00e5 glad i hvit fisk, og at jeg derfor ikke gledet meg spesielt til hovedretten, selv om den ble introdusert med fete typer. <\/p>\n\n\n\n<p>S\u00e5 feil jeg tok. Alle som har smakt piggvar vet at det er noe helt spesielt, b\u00e5de konsistensen og smaken er ubeskrivelig delikat, og de kj\u00f8ttfulle filetene trenger ingen konkurranse fra kraftig tilbeh\u00f8r. Her serverte jeg den med en mild sm\u00f8rsaus, nypoteter og brent purre, et smakfullt, men diskret f\u00f8lge til kongen av fisker. <\/p>\n\n\n\n<figure class=\"wp-block-table\"><table><tbody><tr><td>Porsjoner: 2<\/td><\/tr><\/tbody><\/table><\/figure>\n\n\n\n<hr class=\"wp-block-separator\"\/>\n\n\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-9d6595d7 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\" style=\"flex-basis:33.33%\">\n<p><strong>Ingredienser<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>400 g nypoteter<\/li><li>600 g filet av piggvar med skinnet p\u00e5<\/li><li>1 stor purre<\/li><li>1 potte dill<\/li><li>1 potte gressl\u00f8k<\/li><li>1 dl rapsolje<\/li><li>\u00bd dl fl\u00f8te<\/li><li>1 ss hvitvinseddik<\/li><li>1 ss fiskefond<\/li><li>150 g romtemperert sm\u00f8r i terninger<\/li><li>(\u00bd ts maisenna blandet ut i 1 ss vann)<\/li><\/ul>\n<\/div>\n\n\n\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\" style=\"flex-basis:66.66%\">\n<p><strong>Fremgangsm\u00e5te<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\"><li>Sett ovnen p\u00e5 180 grader, og fyr opp grillen. (Hvis du ikke har grill, bruk jernpanne)<\/li><li>Kok potetene i omtrent 15 minutter, eller til de er m\u00f8re. Legg piggvaren p\u00e5 et stekebrett med bakepapir.<\/li><li>Del purren i to, og skyll den godt (ikke fjern rot-enden, den gj\u00f8r at purren henger sammen p\u00e5 grillen) Pensle purren med olje, salt og pepper. Grill den med kuttsiden ned i omtrent 10 minutter, til den ser brent ut. <\/li><li>Kj\u00f8r dill, gressl\u00f8k og rapsolje sammen med en stavmikser, og sil blandingen gjennom et klede. N\u00e5 har du en enkel urteolje.<\/li><li>Ha fl\u00f8te, eddik og fiskefond (eller gr\u00f8nnsaksfond) i en kjele, og kok opp p\u00e5 h\u00f8y varme. La blandingen koke i 45 sekunder (ta tiden), og ta kjelen av varmen. Pisk inn sm\u00f8ret, en terning av gangen. (Hvis du ikke synes sausen blir tykk nok, kan du l\u00f8se opp \u00bd ts maisenna i 1 ss vann, og piske det inn i sausen, da vil den tykne.) Smak til med salt og pepper.<\/li><li>Stek piggvaren i ovnen i 6\u20138 minutter.<\/li><li>F\u00f8r servering: Hell dilloljen over i sm\u00f8rsausen, og ha blandingen over fisken, purren og potetene. Oljen vil ikke blande seg med sausen, men det blir et nydelig spill p\u00e5 tallerkenen. <\/li><li>Server umiddelbart.
